Healthy Blueberry Muffins Recipe


So the health kick is continuing and today I bring you a recipe to help with the 4pm cake/anything sweet craving. These are surprisingly delicious and so much better for you than your regular sugar fix. 

I'll jump straight in with what you need. These are so easy to make and you get tons of out of the batter so I ended up freezing half of the end results for another week. 

The Ingredients
  • 250g wholewheat flour
  • 200g oat or wheat bran (I actually used ground flaxseed as I had it in the cupboard)
  • 4 tsp baking powder
  • 2 tsp bicarbonate of soda
  • Pinch of salt
  • 450ml natural yoghurt or buttermilk (I went with buttermilk)
  • 180ml vegetable oil
  • 2 tsp vanilla extract
  • 2 eggs
  • 100g light muscavado sugar
  • 350g fresh blueberries
  • Muffin tin and cases

The Method
  • So first you need to line 18 paper cases in the muffin tin (you can do this in stages if your tin is only 12 hole like mine) I also ended up with 21 muffins in total. Then preheat the oven to 200C.
  • Mix the flour, bran (or flaxseed), baking powder, bicarbonate of soda and salt together in a bowl.
  • In a separate bowl, mix together the buttermilk or yoghurt, oil and vanilla extract, then add the eggs and sugar and mix together until smooth. 
  • Add the wet ingredients to the dry ingredients and mix until just combined.
  • Add the blueberries and stir in, being careful not to over mix.
  • Place in the paper cases, almost to the top as they don't rise much and bake for about 20 minutes or until the tops are firm and lightly browned.
  • Once cooked, remove from the muffin tin and leave to cool on a wire rack.

That's it - super easy! These are great to replace with your usual treat and you don't have to feel guilty about it after. 

So the health kick will continue for a bit longer - I've even been to 2 gym classes and just bought myself a new blender…juice recipes to follow, I'm sure!
