Cinnamon Buns


I've been wanting to make cinnamon buns for ages, but just haven't had the time recently (hence the lack in posts), but I was given an amazing baking book for my birthday with a really easy recipe for cinnamon buns so I thought it was the perfect time to give them a go!


The first good thing about this recipe is that you don't need any yeast, which cuts out the wait for proving. Secondly, the method couldn't be easier which is always a bonus. So here it is, the super easy recipe for delicious cinnamon buns!

Ingredients
For the buns:
  • 100g melted butter (plus extra for greasing)
  • 350g self raising flour
  • pinch of salt
  • 2 tbsp caster sugar
  • 1 tsp ground cinnamon
  • 2 egg yolks
  • 200ml milk (plus extra for glazing)
For the filling:
  • 1 tsp ground cinnamon
  • 55g soft light brown sugar
  • 2 tbsp caster sugar
  • 15g melted butter
For the icing:
  • 125g icing sugar
  • 2 tbsp cream cheese
  • 15g butter
  • 2 tbsp hot water
  • 1 tsp vanilla extract
Method

Start by pre-heating the oven to 180°C (350°F/Gas Mark 4), grease an 8inch round cake tin and line the bottom.



Add the dry ingredients to a mixing bowl - the flour, salt, sugar and cinnamon - and mix together. In a separate bowl, add the wet ingredients - the butter, egg yolks and milk - and whisk together.


Pour the wet ingredients into the dry ingredients and combine to form a soft dough. Make space on a worktop, tear off a large sheet of baking paper and dust with flour. Turn the dough out onto the baking paper and roll out into a rectangle (about 12 x 10 inches). The dough is very sticky so make sure your rolling pin is floured as well.

Next you need to make the filling by simply adding all the ingredients to a bowl - the cinnamon, soft light brown sugar, caster sugar and melted butter - and mixing together.


Once the filling in ready, spread over the rolled out dough and I added a few raisins at this point as well (but this is completely up to you). Then use the baking paper to roll up like a swiss roll. Cut into 8 even slices and place in a baking tin, with the swirl facing up (sorry I forgot to take a picture of this). Before placing in the oven, brush each bun with some milk.

Then place in the oven and bake for 30-35 minutes until golden brown. Once ready, take out from the oven and leave in the tin for 5 minutes. 

To make the icing, add the icing sugar to a mixing bowl and make a well in the middle for the cream cheese, butter and hot water. Mix together and add more water if needed (it should coat the back of a spoon). Pour or drizzle over the buns and serve hot or cold (as you can see, I most definitely poured).

That's it, a really simple recipe for cinnamon buns which are absolutely delicious. Be warned, you may have to go in for seconds.
